Two words: Avocado Toast

I’m not sure about you, but I love me a healthy lunch recipe that’s super easy and fast. What doesn’t say a healthy lunch idea than avocado toast? Not only is it SO aesthetically pleasing, but it is also yummy (cue Justin Bieber). But who wants to spend $10 on this every time they go to brunch?! Not me! That’s why I’m here to give you a super quick and easy recipe that is also nutritious to make (takes probably 10 minutes MAX).
Ingredients:
- 2 slices of Dave’s Killer Bread 21 Whole Grain (my all time favorite bread!)
- ½ avocado
- 2 eggs (or egg whites if you prefer)
Optional Ingredients:
- 5 cherry tomatoes (or however many you prefer)
- Almond milk (optional)
- Pink Himalayan Salt (optional)
- Pepper (optional)
- Paprika (optional)
Steps:
- Toast your 2 slices of Dave’s Killer Bread 21 Whole Grain. This bread is a GREAT alternative to your typical white and wheat breads out in the market because it offers amazing nutritional value as well as organic ingredients. There are 5 grams of fiber and 5 grams of protein in just one slice (that’s a lot!) AND tastes good. Who knew healthy could taste good 😉
- Mash (or slice) your avocado onto your bread
- Crack open 2 eggs and add in some almond milk (This part is totally optional but I find that it makes my eggs a lot fluffier)
- Scramble the eggs and place on top of toast
- Slice your cherry tomatoes and place on top of the eggs
- Sprinkle on the pink Himalayan salt, pepper and paprika
Bon appetit! You now have your perfectly, instagramable avocado toast that not only is healthy, but also so low in cost! This is a great nutritional meal that will make you full, but not stuffed. It is also so time efficient that you can make this on your busiest of days!
